Thai Curry
Coconut-base Thai green curry, lightly inflected with Indian spice notes.
We make our green curry paste fresh weekly — galangal, lemongrass, kaffir lime, green chili, cilantro stems. We thin it with light coconut milk to keep the dish bright rather than heavy, then add a small Indian inflection: mustard seeds and curry leaves bloomed in oil at the start.
